Sweet, sticky, fall-apart beef short ribs This is

Sweet, sticky, fall-apart beef short ribs
This is such a good one to batch cook.

The beef becomes so tender it just pulls apart, then you can freeze it in portions ready to turn into completely different meals throughout the week.

How we made ours:

Firstly choose the amount of beef short ribs you need for your family.

Bring the beef short ribs to room temperature, season well with salt and pepper, then lightly coat in flour, we used spelt flour.

Brown the ribs in a little tallow in a frying pan, then place them into a large ovenproof pot on top of:
• carrots
• onion
• garlic
• celery

Mix together a marinade of:
• half cup sugar-free ketchup
• 2tbsp soy sauce
• 2tbsp Worcestershire sauce
• 1 cup apple juice
• 2tbsp apple cider vinegar
• 4tbsp maple syrup
• 1tsp chillies

Pour this all over the beef, then add 1-2 cups bone broth to the pot.

Cover and slow cook at around 130°C for approximately 6 hours, until the meat is beautifully tender and falling apart.

Once cooked, remove the beef and strain or remove some of the cooking liquid. Simmer the liquid in a pan until it reduces down into a gorgeous thick, sticky sauce.

Coat the beef generously in the reduced sauce, then pop it back into the oven at 180°C for around 20 minutes until sticky and caramelised.

Eat some straight away, then shred and freeze the rest in meal-sized portions.
